As the signature restaurant at Copperwynd Resort in Scottsdale, Flourish reigns high over the gorgeous views of Fountain Hills with a quiet stateliness. The scenic restaurant with glass surrounds is the culinary playground for Flourish’s executive chef, Richie Sica, who incorporates several specialty menus at the restaurant.

Salmon Cakes

Healthy, light and delicious, salmon cakes are easily prepared with ingredients you may already have on hand! Great served over a salad, or just by themselves. Feel free to change up the herbs or veggies according to your taste!  Use my “secret” sauce or your favorite store-bought aioli.

Fresh Fruit Tart

This recipe has been in my family for years. It’s the perfect dessert to welcome springtime! Chef’s tip: cold butter helps create air pockets in the pastry, leaving you with a flaky crust. The glaze is optional, although recommended!

PB&J Breakfast bars are the perfect on-the-go snack! Skip the peanut butter and jelly—these bars are packed full of protein and good fats! I use grain-free granola and found dried strawberries at Whole Foods. For storage, these are great kept in the refrigerator.
