Winter Harvest Salad

A really tasty salad using all the best winter veggies! Both the salad and orange shallot vinaigrette can be made in advance and stored covered in the refrigerator until needed.

Baby butter lettuce
Radicchio, shredded
1 orange, peeled and sliced
Shredded beets (can be found in most produce sections)
Butternut squash
Pomegranate seeds
Candied nuts

Orange Shallot Vinaigrette Ingredients:
6 tablespoons olive oil
3 tablespoons red wine vinegar
1 tablespoon orange juice (if you slice the orange over a bowl, you will have this much)
1 tablespoon finely chopped shallot
1 teaspoon Dijon mustard
1 teaspoon honey

Arrange lettuces, beets, squash and radicchio in salad bowl. Sprinkle with pomegranate seeds and arrange orange slices on top.

Mix dressing ingredients in screw top jar. Shake well and drizzle over salad. Top with nuts and enjoy!
