Confetti Ice Cream Sandwiches
Yield: 10 sandwiches
1½ cups all-purpose flour
½ teaspoon baking soda
¾ teaspoon baking powder
½ teaspoon kosher salt
½ cup unsalted butter, room temperature
½ cup granulated sugar
½ cup light brown sugar
½ teaspoon vanilla extract
1 egg
1 cup rainbow sprinkles,
1½ quarts ice cream (any flavor), slightly softened
To make the confetti cookies:
Preheat the oven to 350 F and line two baking sheets with parchment paper. Sift the flour, baking soda, baking powder and salt together in a bowl. Set aside.
Using a stand or hand mixer, cream the butter, granulated sugar and brown sugar on medium high speed until fluffy, about 2 minutes. Add the vanilla extract and egg and mix until combined.
Fold in the dry ingredients until combined, then fold in half of the sprinkles (½ cup). Be careful not to overmix.
Roll about two tablespoons of the dough into a ball or use a cookie scoop to place the cookies onto the lined baking sheets, leaving at least 2 inches in between.
Bake for 9-11 minutes, or until the cookies are slightly golden brown on the edges. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring to a cooling rack.
To make the confetti ice cream sandwiches:
Place a generous scoop of ice cream onto a cookie and top with a second cookie. Coat the outside of the exposed ice cream with the remaining sprinkles. Serve immediately.
